Want to know the secret to making the easiest lamb roast ever? Masterchef winner Adam Liaw has given us the details on making the perfect roast beef fillet with red wine glaze.
For this, you’ll need to use your ASKO steam oven. Place a heat proof probe thermometer into the meat, and plug it into the oven. The oven will take the guess work out of cooking a roast. It will tell you when the meat is cooked. You won’t have to worry about serving any under or overcooked meat anymore.
So what is involved in cooking the beef fillet?
Step one
You first have to prepare the beef fillet. Sprinkle some olive oil, salt and pepper over the beef fillet. Make sure to rub the oil, salt and pepper into the beef fillet.
Step two
Place a roasting tray on top of an induction hob. On the induction hob, turn the settings to bridge mode, as this will give you even heat across the entire pan.
Step three
Boil some oil and place your beef fillet into the roasting tray. Because you have selected bridge mode, you won’t have to worry about some of the roast burning, as the heat is completely even.
Step four
Once it has cooked, get your probe thermometer and place it into the very center of the meat, which will take the longest to cook.
Step five
Place your beef fillet, along with the thermometer, into a pre-heated oven. Make sure to plug the thermometer into the oven. This way, your oven will notify you when your roast is ready to be taken out of the oven.
Once the meat has been cooked, you can remove it from the oven and place on a separate tray to rest. Remember to also remove the probe thermometer.
Step six
Now it’s time to make the sauce. You can use the pan you cooked your beef fillet in. This will give the sauce some extra flavour.
Turn the induction hob back onto bridge mode, and add some butter into the roasting tray. Add in some cut up shallots and four cloves of garlic.
Step seven
Once the shallots and garlic have been cooked, it’s time to add the red wine. You can use any red wine you like. However, it’s important to remember that it’s going to get really reduced, which will cause the flavour to intensify. Because of this, you may prefer to use a lighter red wine.
Add the red wine to the pan and stir. Once added, include some thyme and beef stock, and let that reduce. This will reduce fairly quickly due to the heat coming from both of the trays.
Step eight
Once boiling, add in some extra blocks of cold butter, as well as some red wine vinegar to freshen it all up.
Strain the sauce, and serve it with the rare beef fillet.
