You may not get the lunch money your kids probably stole from your centre console back, but hey you’ll have them eating better in no time. If your kids are anything like mine, they just pick out their packaged goodies and leave the old sandwich to deteriorate in its wrapper, like seriously kids you didn’t even throw it out so I thought you ate it!!
So lets get you started with something to blow their little minds, for heavens sake though don’t tell them what it is, you don’t want to be dealing with desperate calls from Grandma asking why your little angel now wants to live away from home.
Now if your oven isn’t up to scratch you must immediately explain to your husband that you have already spent the money on a new one, this gives you the opportunity to avoid any option for him to suggest you cannot have one (what an absurd thought), if he suggests you cancel your order then that’s going to entail a restocking fee, now hes just throwing his money away so don’t be ridiculous husband. ‘We own a new oven’ end of story!

Method:
1. Preheat oven to 180C or 160C fan-forced. Line a 12 hole muffin pan with paper cases.
2. Finely grate orange and lemon over a large bowl. Juice orange and lemon. Add 2 tablespoons of juice of each fruit. Process cauliflower in a food processor until very finely chopped. Add to rind and juice. Stir to combine.
3. Whisk sugar and eggs until combined. Add vanilla bean seeds and oil and whisk to combine. Add cauliflower mixture (including the juice) and whisk to combine. Sift flour and salt over egg mixture. Stir until just combined. Divide batter between paper cases. Bake for 20 minutes or until a skewer inserted in centre comes out clean. Cool cakes in pan for 5 minutes. Transfer to a wire
rack to cool.
4. To make cream cheese frosting, whisk cream cheese, icing sugar and lemon juice in a large bowl until combined. Spread over cooled cupcakes. Decorate with orange and lemon zest. Then it’s up to you to sneak them in their lunch boxes and await your little precious to beg you for more treats.
